I can confirm, finally, that the first drinkable beverage from the Lines In Wax offshoot project The Steegan Brewing Co., has successfully been completed. It tastes a bit "yeasty" as I'm sure the recipe I have isn't correct for what I'm trying to achieve; a two-week carboy fermentation period may have been too short and the yeast remained active during bottle fermentation. I'm jumping to this conclusion as conditioning with the minimum amount of sugar still gave a large amount of carbonation when the beer was finished (my first batch exploded!). Also, despite using twice as much pilsner malts to pale ale malts, the ale is still a dark red colour. Using 4 parts Cascade to 1 part Chinook over an hour boil has given a pleasingly burnt, hoppy aftertaste which is genuinely the redeeming feature of this fist brew.
